Hearty & Soothing Chickpeas Soup
Chickpeas are frequently used in the Mediterranean diet as they come with a host of potential health benefits. Chickpeas can improve digestion; help manage weight and since it is rich in protein, it is an excellent replacement for meat for vegetarians and vegans. Here’s something different for vegetarians – a low-calorie and nutrient-packed Chickpeas soup!

Instructions
  1. Soak the chickpeas for 3-4 hours, pressure cook and keep them aside
  2. In a saucepan, take olive oil or regular oil and sauté the garlic. Once it’s golden add chopped onions, tomatoes and celery
  3. Cover it with a lid and let it cook till soft
  4. Add cooked chickpeas and water to soup consistency and let it simmer
  5. Add cumin powder and lemon juice. Serve it hot
